In recent years, various newer drugs are discovered which are unstable in nature due to higher content of water in the molecules. Also most of the biotechnological & food products are having short storage period because of instability. Freeze drying is a most suitable but cost intensive method for improving the stability & long term storage by reducing the water content from labile products. Freeze drying principle mainly depends on sublimation process in which frozen ice is directly converts in to water vapors. Freeze drying also known as lyophilization. Generally freeze drying process applied in pharmaceutical, biological & food industries. This review focused on principle behind the process, steps involved of freeze drying & its application in industrial processes.
